Grape: Aleatico is a rarely planted red wine variety traditionally found in Elba and southern Tuscany in Italy and for nearly 100 years in Australia and is recorded as one of Napoleon’s favourite wines during his exile on the island of Elba and we are excited about being part of the revival of Aleatico wines in Australia with the creators moscato style Aleatico.


Vineyards: Situated in the Hill tops of NSW, the vineyard is over 500m above sea level


Climate: The high altitude, coupled with the dry summer and autumn, provides excellent ripening conditions. This and the rich red soils enables the production of wines with great intensity of flavour and finesse.


Harvest: Harvest begins March to April once the fruit has reached its optimum ripeness. Our aim is to allow the intese lychee and rose turkish delight flavors to reach their maximum intensity and harvest before loosing any acid freshness.


Fermentation:  After harvest the grapes are destemmed crushed and the juce is pressed off after 10-12 hours on the skins. Fermentation takes place at a

temperature of 12-15 Degrees Celcuis. A cooler ferment helps to preserve the crisp lifted aromatic characters of Aleatico and helps hold a tight crisp pallet.


Ageing:  Once fermentation has been completed we the wine is matured in stainless for 3-8 months to allow the yeast to return some of the fruit characters and to help soften the mid pallet. Post Maturation the wine is pressurised under Carbon dioxide in tank to preserve its aroma and to create the final sparkling wine.


Residual Sugar:  30- 40 g/l R.S. (Sweet)


Tasting notes:Vibrant pink in colour with lifted muscat aromas including turkish delight with hints of rose water and gentle spicy notes. With ripe lychee fruit characters driving the wines medium weight palate all balanced by a crisp and fresh finish.


Cellaring:  Aleatico is a highly aromatic variety and is made to enjoy now whilst the fruit characters are fresh and vibrant.
