Grape: Originated in the Rhine region of Germany. Riesling is an aromatic grape variety displaying flowery, almost perfumed, aromas as well as high acidity.
Vineyards: Sustainably produced riesling off one of our local Biodynamically run vineyards Maytree situated in Canyonlee. The thin sandy soils of this vineyard enhance the zesty tight lime characters of our rieslings.
Climate: The climate is moderately humid with hot summers and cold winters. The total sum of the annual sunshine amounts to 2950 hours hours.
Harvest: Harvest begins March to April once the fruit has reached its optimum ripeness. Our aim is to create a tight style of Riesling with the ability to age for many years, therefore harvest is around 10-11 baume to retain maximum crispness and acidity. 100% of the fruit is hand picked, with each load being carefully inspected by our winemakers to ensure premium quality.
Fermentation: After harvest the grapes are loaded as whole bunches
immediately into the press for a light pressing. Fermentation takes place after the juice is racked crystal clear off its solids at a temperature of 10-12 Degrees celsius. A cold slow ferment helps to preserve the crisp zesty lime
characters we see in the final wines.
Ageing: Once fermentation has been completed we mature the Riesling in stainless vats mixing the lees (dead yeast cells) every fortnight until the majority of the fruit flavours are released back into the wine. This process may take 6 months.
Residual Sugar: Less than 1g/l R.S. (Dry)
Tasting notes: Light straw in colour, with ripe citrus peel aromas complimented by a long elegant palate of lime and lemon fruits balanced by a fresh and lingering finish. We created this wine to be cellared for years which means it has a strong acid structure enhanced by a solid textured palate. Those who enjoy a young zippy style will appreciate this wine in its youth.
Cellaring: The whole aim of creating a tight crisp Riesling is to give the wines maximum cellaring potential. Our ultimate aim is to offer a late released Riesling that has already been aged 3-5 years and displaying typical aged characters of Toast and Kerosine.
Food Pairing: Our Rieslings have a distinctive lemon/limey twist that makes them a particularly good match for fish and fresh seafood or Asian and Asian-inspired food.
